But is it possible to lay bricks in the winter or is it one task you should delay until the weather gets a little warmer?

In short, yes. Whilst cold temperatures aren’t ideal, laying bricks is certainly not impossible. There are however some instances where laying bricks should be avoided. It needs to be above 2°C to lay bricks as a general rule.
If temperatures do drop below 2°C, the bricks or mortar ingredients may need to be heated and maintained at a consistently warm temperature on-site to ensure the best results.
Prior to laying, the bricks should be dry and free from frost, ice and snow. The mortar should also not come into contact with frozen surfaces. Even before use and/or mixing, materials such as bricks and mortar ingredients should be protected from the elements.
Once laid, the structure should be covered and adequately insulated with a polythene sheet. This will prevent rain and frost from causing damage to the structure as temperatures continue to dip overnight.
It is important to note that the curing time is likely to be longer in colder temperatures due to the lower moisture levels and heightened air content. If the mortar isn’t given enough time to reach full strength, this could result in a weaker bond, which would make the overall structure particularly prone to cracking.
